Fritz Underground Winery

Hi there! I am Natalia Fritz and I am the very loving and happy wife to winery owner Clay Fritz, a busy and proud mother to three awesome kids: Cannon, Bianca, and Leo.  I am a farmer’s daughter, born and raised in California. I have had a love of cooking since I can remember. Natalia’s Kitchen came about because of my passion for food and wine. Below are some of my favorite recipes to share. Ahi Stacks
If you love tuna, you will love this too! Fresh Ahi marinated in a beautiful Asian sauce gets layered with buttery avocado, steamed rice and topped with seaweed salad. So fresh! This is a fast, healthy and beautiful dish that will satisfy you enough that it can be your whole meal.
Asian Shrimp Salad
This is addictive and magical! I love this salad. Clay loves this salad. My kids love this salad. You will love this salad!
Asparagus Lemon Tart
I recently came across this light and flavorful tart on Instagram - it is effortless and beautiful. A crowd pleaser for sure! Pair with Fritz 2021 Estate Sauvignon Blanc for a fast and elegant and light lunch.
Beef Bourguignon
Honestly, this is one of Clay's favorite winter meals. It is rich, decadent and over-the-top delicious! Go for it! You'll love it too. We love it with Fritz 100% Hillside Cabernet Sauvignon!
Caprese Pasta Salad
As part of the meal for our monthly Team Fritz lunch in June, I made this fresh and easy pasta salad. I was delighted to use basil from our garden. Another healthy and satisfying dish everyone loves.
Celery & Olive Medly Salad
This is a pretty and fresh salad. I think it goes very nicely next to fish or roasted chicken. Celery, green olives and toasted pine nuts are the stars in this show! The jalapeno makes a great guest appearance.
Chilled Pea soup with Mint
Bright and creamy, this lovely soup is expertly paired with Fritz Chardonnay. I'm serious! ;)
Cozy Beef Stew
Open that bottle of wine, and set your table! This dish will be ready in under 45 minutes. This is super simple and filled with flavor. Meaty, hearty, comfort food. I like this because it is so dependable. Not only do you use the Instant pot, but you finish it off in a hot oven, which allows the meat to caramelize on top which adds to a lot of richness.
Guinness Beef Stew
Crumbly, flaky crust paired with hearty meat and potatoes make this my favorite Irish dish!
Lamb Stew
This is the perfect rainy day meal with our Estate Reserve Cabernet! I made this for our staff lunch and we loved it! You will too. Xoxo
Mediterranean Roasted Chicken
Packed with flavor and protein, this dish is incredibly satisfying. Assuming you have all the ingredients in your pantry, this will be easy. Please allow for a few hours to marinate.
Meyer Lemon Curd
Lemony, Lucious, Bright, Creamy... easy to make. Very good with scones, shortbread cookies, crepes...
Peach Jam
This is such an easy and delightful recipe you will love. It is absolutely lovely on crostini topped with the cutest little basil leaf you can find and savored with a glass of our Estate Sauvignon Blanc for a delicious hors d'oeuvres.
Potato & Pea Chowder
This is a perfect soup for a spring lunch or dinner. The cream and starchy potatoes yield a satisfying body to the bright and light springy flavors without being too heavy. It is simple and pretty quick to make and savor! From prep to table - I think you’ll find this straightforward and delicious!! xoxo
Potato Leek Soup
Creamy, simple, elegant - this classic soup is easy to pull together and serve any day! The most basic ingredients that require little effort during preparation will keep anyone engaged and happy in the kitchen. This also means little clean up! My entire family loves this soup. So will you!
Quick Lemon Caper Sauce!
This is easy and delicious and pairs so nicely with our Chardonnay! This sauce is so easy to cook up and have on hand to serve with your favorite pasta, fish or chicken.
Quick Queso!
Best served with your favorite tortilla chips. Sprinkle with your favorite hot sauce.
Radish Butter
Radish Butter with a little bit of flaky sea salt is gorgeous on crackers or smeared on good quality bread, topped with thinly sliced cucumbers and some dill.
Raspberry Cream Cookies
Slightly off the path from our traditional chocolate chip cookie - these cookies are bright and sweet AND creamy. I bake these often for our team at the winery, and they've decided they go nicely with our Estate Rose!
Roasted Stuffed Tomatoes
Rustic & elegant - these are quick, tasty and excellent with our Sauvignon Blanc.
Roasted Vegetable Panzanella Salad
This hearty salad pairs very nicely with our award winning Russian River Chardonnay.
Snappy Seafood Pasta
Luckily for me, my entire family loves seafood... and spice. This is a terrific meal you will love over and over. Enjoy it with our Estate Rose. Rose + seafood = match made in heaven.
Spicy Soba Noodle Salad
This salad is perfect on a warm day with a glass of Fritz Sauvignon Blanc or Fritz Russian River Chardonnay! I made this for our monthly Team Fritz Lunch in June. It is a quick dish that makes mouths happy.
The BEST Blueberry Muffins
These muffins have become a weekly addition to our mornings. I usually prep the dry ingredients the night before. I am convinced 2 steps make these muffins terrific: 1) that the high baking temp of 425 is what contributes to the crisp outer crust while the inside is pillowy, soft and sweet. 2) heating half the blueberries with a sprinkling of sugar in a sauce pan for a few minutes before adding them to the batter really open up their flavor.
Tomato Cobbler
I promise this is so comforting and delicious. The flaky buttery crust with a dusting of flakey sea salt on top, blanketing vine ripe tomatoes is fantastic. So good with Chardonnay.
Vanilla Bundt Cake
Barrel Tasting Weekend this past March was cold and rainy! Our staff worked lots of hours to help make Barrel Tasting a smashing success and great experience for our guests. To say "THANKS!" I made them this lovely Vanilla Bundt Cake, which you should enjoy with our Estate Zinfandel! This wine has just the right level of sweetness to savor with this dessert.
Wild Rice Casserole
This is a throwback from my childhood, somewhere during the early 80's. But I still love it. Especially when it is cold and rainy.
