A fresh and crunchy salad you can make in a snap! Swap the shrimp for any other protein; chicken, tofu, beef... Add any vegetables that make you happy. I usually add snow peas but I did not have any last night. Same with green onions; I try to always keep some on hand, but my last ones were used in my cheddar zucchini bread the day before.
