Combine the garlic, oregano, red wine vinegar, extra virgin olive oil, prunes, olives, capers + juice and the bay leaves in a bowl and mix well. Add the chicken and toss around to coat well. Allow the chicken to marinate for a few hours in the refrigerator.
Preheat the oven to 350. Place the chicken and all the marinade ingredients in your favorite casserole dish. Combine the brown sugar and wine wine together in a small bown and sprinkle evenly over the chicken.
Bake 45-50 minutes or until the chicken is cooked through.
Remove from the oven and sprinkle with the chopped parsley.
