A rich and hearty stew is here to make you happy. A combination of celery, carrots, onion & mushrooms and a splash of red wine will bring lots of life to your stew meat. Cooked in the Insta Pot and finished in the oven, you are going to be one happy diner! Give it a try. xoxo
  • 2 lbs chuck roast cut into 1.5 inch pieces
  • 1 medium onion, sliced
  • 2 stalks of celery, sliced on the diagonal in thick pieces
  • 6 carrots, cleaned, sliced on the diagonal in thick pieces
  • 8 large button mushrooms, quartered
  • 2 tbsps small tapioca (this is your thickening agent)
  • 1/2 cup tomato juice
  • 1/2 cup Fritz Zinfandel
  • 2 tsps Kosher salt
  • 1 tsp sugar

Place all ingredients in your Instant Pot. Select the stew/meat setting for 35 minutes. 

Meanwhile, preheat your oven to 400. After the stew is done in the Instant Pot, let it be for 10 minutes, then release the rest of the steam. Now, pour the stew into an oven-safe baking dish, place it in the oven, uncovered for 12-15 minutes. This helps caramelize the meat an thicken the gravy. 

You can enjoy this over crusty, toasted sourdough bread, hot buttery egg noodles, over creamy polenta or just on its own. It is fabulous!
