Hi there! I am Natalia Fritz and I am the very loving and happy wife to winery owner Clay Fritz, a busy and proud mother to three awesome kids: Cannon, Bianca, and Leo.  I am a farmer’s daughter, born and raised in California. I have had a love of cooking since I can remember. Natalia’s Kitchen came about because of my passion for food and wine. Below are some of my favorite recipes to share. Asparagus Lemon Tart

I recently came across this light and flavorful tart on Instagram - it is effortless and beautiful. A crowd pleaser for sure! Pair with Fritz 2015 Estate Sauvignon Blanc for a fast and elegant and light lunch.
Baked Turkey Meatballs with Natalia's Sweet Potato Tomato Sauce

These are easy to prepare, quick to bake and very flavorful. I use ground turkey to keep the meal lean. Enjoying the meatballs with my sweet potato tomato sauce makes it almost a complete meal; you are getting tons of protein and vegetables in each serving.

Honestly, this is one of Clay's favorite winter meals. It is rich, decadent and over-the-top delicious! Go for it! You'll love it too. As part of the recipe, I use an ENTIRE bottle of our 2013 Estate Reserve Zinfandel.

Truly a hearty delicious meal that pairs quite nicely with our 2014 Estate Malbec. It is rich, flavorful and satisfies. Clay, myself and our three kids enjoyed it over creamy polenta.

Celery & Olive Medly Salad

This is a pretty and fresh salad. I think it goes very nicely next to fish or roasted chicken. Celery, green olives and toasted pine nuts are the stars in this show! The jalapeno makes a great guest appearance.

This is a very fast, healthy and flavorful soup. It has a spicy kick to it that will keep you on your toes. Perfect for a cold day with a crisp glass of our 2014 Blanc de Noirs. It is a perfect pairing!!

This is such an easy crowd pleaser! I am so happy each time I take this dish out of the oven... and happier when I place each bite in my mouth. It pairs so very nicely with our Lost Canyon Morelli Lane Pinot Noir. I encourage you to invite some friends over and savor this together.

LOVE, COMFORT & WARMTH!!! In the middle of winter, nothing satisfies us Fritz's like a piping hot bowl of French Onion soup. This has been my favorite recipe for this soup for years. Basically, it is from Julia Child's cookbook, Mastering the Art of French Cooking, Volume 1. But I tweaked it a little for fun.

Late Harvest Zinfandel Chocolate Tart

I happened to have a bag of fortune cookie wafers from our recent visit to the fortune cookie factory in San Francisco. I had been wanting to try them as a pie shell for a few weeks. I am pleasantly surprised - it is a nice accompaniment to the dark chocolate filling because they are light and clean in flavor so the crust does not compete. If you can't find fortune cookies, any traditional crust will work just as well.

We all need a snappy dinner to pull together that will satisfy the entire table. I think this is it! Especially as the weather gets cooler, this sauce is amusing and comforting. It has really big and fun flavors, from the red pepper flakes and chopped kalamata olives simmered with the ground sirloin... it is glorious!

Most of us know pound cakes made with butter. Well, this version is a worthy variation and I hope with all my heart you try it. Not only is it quite simple, it is actually a "little" healthier. Olive oil contains tocopherols which are antioxidants that slow the staling process, so it will stay fresh longer. This cake is satisfying with a cup of coffee, a cup of tea or a glass of champagne. You'll be impressed by how much it tastes and feels like traditional pound cake.

Sparkling Risotto!

To sum it up, I wanted to try something slightly different in my simple risotto for tonight's dinner. Rather than simmering the arborio in the first steps with white wine, I experimented with our Blanc de Noirs. The end result was fabulous!! Lucious, bright and creamy.

This soup is high in protein and flavor. I prepare dried black beans in advance, but you can certainly use canned beans, they work just as well. This soup freezes well.

This soup is souper! Sweet and a little bit spicy. It is a cinch to make and very nutritious. A cool crisp glass of Fritz Rose or Sauvignon Blanc make it more complete. Give it a whirl!
the BEST blueberry muffins

These muffins have become a weekly addition to our mornings. I usually prep the dry ingredients the night before. I am convinced 2 steps make these muffins terrific: 1) that the high baking temp of 425 is what contributes to the crisp outer crust while the inside is pillowy, soft and sweet. 2) heating half the blueberries with a sprinkling of sugar in a sauce pan for a few minutes before adding them to the batter really open up their flavor.

Barrel Tasting Weekend this past March was cold and rainy! Our staff worked lots of hours to help make Barrel Tasting a smashing success and great experience for our guests. To say "THANKS!" I made them this lovely Vanilla Bundt Cake, which you should enjoy with our 2013 Late Harvest Zinfandel! This wine has just the right level of sweetness to savor with this dessert.
